Chocolate Chip Pumpkin Muffins
These muffins are one of my favorites this time of year!
You will need:
- 1 2/3 Cups flour
- 1 Cup sugar
- 2 Tsp cinnamon
- 1/2 Tsp nutmeg
- 1/2 Tsp ginger
- 1 Tsp baking soda
- 1/4 Tsp baking powder
- 2 eggs
- 1 (15-16 oz) can of pumpkin
- 1/2 Cup butter (softened)
- 1 Cup chocolate chips
Mix the dry ingredients in a large bowl and set aside. Next, mix the eggs, pumpkin, and softened butter in another bowl. The butter will not completely dissolve into this wet mixture and that is normal. Then, pour the wet mixture into the dry mixture and stir together. The batter is very thick, so you will want to use a sturdy wooden spoon or spatula spoon for mixing. Once the wet and the dry are mixed together, stir in the chocolate chips.
Spray the muffin pan with non-stick spray and fill the muffin cups 2/3 full. This recipe makes 12-18 regular sized muffins. These muffins are very dense, so I also like to use mini-muffin pans for this recipe. Bake at 350 degrees for about 20-25 minutes.
